|the shii-take is a native edible mushroom east asia. this species is now the second most consumed edible mushroom in the world, built long eating habits of the asian people. recently it was introduced to production and consumption in western countries. the word »shii-take» comes from the japanese shii (a similar tree with oak) and take (mushroom). the first historical reference consumption of shii-take date of 199 ad. in nature, the shii-take can be found in asian forests, which develops in dead trees. is an aerobic fungus, wood decomposer which degrade cellulose and lignin for energia.o shii-take is nutritious, rich in protein, containing in the dry matter 17,5% protein, nine essential amino acids. also has medical significance, with substances having medicinal properties for the treatment and control of blood pressure, reduce cholesterol level, strengthening the immune system and inhibiting the development of tumors, viruses, and bacteria. the shii-take allows a wide variation in the preparation, ranging from soups to baked goods and snacks.
